To prepare for the next shot, of course.

Some years ago our coffee team occasionally ran out of cream, and we had
to drink the coffee black, until someone got enough energy to buy more.
Sometimes we even ran out of sugar. But even when drinking cafe brutal
(i.e. no spices) most people stirred it before drinking it.
