What is the optimal resolution I can get from a camera between 5 and 3
mega pixels?

The best one the camera is capable of.
I think the question you meant to ask is different from this one.

This isn't the question you asked, but I've gotten great 18x20" prints
from clubphoto.com from my 4 mp Canon G3.

Optimal resolution is the one from the camera capacity and is known as
optical or physical resolution, the highest number of pixels the camera can
create. This amount is not enough for large print but it can be resampled or
interpolated, the terms that mean using software to create extra required
new pixels base on the physical ones. The quality of the image then depends
on the software used and the ways the camera creates the optical or physical
pixels. Typically, a decent camera of 4MB pixels with good photo taking
skill can produce very good quality 16 x 20" color print or even larger.

Well, between 5 and 3 megapixels. So what are you really trying to ask?
