I agree, there is plenty of footage showing these type of skills even not if in such hairy locations, for example https://www.youtube.com/watch?v=56kJ99AvfoI Remember that GoPro camera angles make the track ahead look narrower than it actually is. I don't doubt that it *could* be faked using green screens and commercial movie rendering power, but I think this is just very good shooting and editing.
