Default metering through the camera

I understand how to focus on an object then hold the button down, compose
shot and take it. But, how do I meter through the camera then recompose and
shoot?

Most cameras have an exposure lock button. The main question is what object
should we point at for exposure metering?

Depends on your camera, and on my camera it also depends on custom
settings. Sometimes holding the shutter half-down to pre-focus *also*
locks exposure. Sometimes it's a separate button.

Mostly I do it by manual control, myself.

It would help to know the camera, but if you have a manual mode or an
exposure lock button it is quite simple.
