I have two old disposable cameras that were supposed to be developed by
2001. Can anyone tell me if I can still get them developed/have good
quality?

Heat is the enemy of film. If they haven't gotten too hot for too long, then
you should get some reasinable prints. Expect color shifts and low contrast.
I wouldn't pay top dollar for processing.
