Have been experimenting with my handy-dandy Canon 100mm f2.8 Mk I Macro
lens and a quarter and got some amazing close-ups. It's incredible how
many scratches there can be on a seemingly newish and shiny coin.
Anyway, I was wondering, is it possible to add extension tubes to the
(1:1) macro lens to get even greater magnification? I can't think of
any reason why not? Thanks.

Works fine. Try adding a 1.4 or 2x teleconverter as well, by itself
or with the tubes. Just be aware that it may affect your TTL flash
metering.
