Should I buy a MAMIYA 7 II or use my Nikon D300

You don't say where you live, but there's a good chance that there's a
Calumet photo nearby, and they have quite an extensive rental
department. You could rent the Mamiya 7II and 43mm lens for US$210/week,
which, even for a couple weeks, would be much cheaper than owning them.
You could try them for a weekend to see. Here's the MF listing:

You could also rent a higher-end Nikon digital and/or some wide angle
lenses, which would be more familiar to you.

They have "call" for prices for the really high-end medium format-based
digital systems, which, being digital SLRs, should be more familiar to
you than a medium-format film rangefinder. They won't be cheap even to
rent, and you'll probably have to put down an enormous deposit, but
they'll get you outstanding results.

Get a prime lens (about 20mm) for your Nikon. Keep the lens axis level
to the floor. (or find the zoom setting for your less with the least
distortion and use that).

MF is wonderful but takes time to develop the skills and time to work
the film dev/scan...
