I too have experimented with desaturation. My preferred technique is
to duplicate a layer, convert one of the layers to monochrome and then
play around with the blend ratio.

There is a staircase going up the centre of the image. If you look
carefully you will see that near the bottom of the stairs there are
people who have not been desaturated.
