Amateur Photographer magazine had an article on corrected 31 problems
in photography. Number whatever, was about exposing for highlights.
They had a tiny little pair of before and after shots of a scene
where the land was black and the sky bright. They obviously raised
up the land by at least 4 stops in order to show detail and equalized
the image in the "after" shot. But it was a misrepresentation.
Problem is, doing that makes horrific noise visible. A scene in a
wood where some trees are in sun and there are other areas in shade,
can be 9-10 stops different. I don't care how many stops of DR you
have, underexposed is underexposed and when you try to fix it, you
cannot avoid the ugly noise in the dark areas. Better to let it stay
dark or blow the highlights.

Whatever noise offends you is easily dealt with in post whereas wrongly
exposing the shot will leave you with a mess to deal with. In the
appropriate conditions there's also HDR.
