Point and shoot digitals with remote shutter???

Please excuse all of the resident moron pretend-photographer trolls that
live in these newsgroups who refused to answer your question. They are too
afraid to admit to some simple free software and inexpensive P&S cameras
that blow-away anything that their imaginary dslr's can do. They all know
about this simple solution, they just don't want to admit to its existence
because it proves everything that they blindly believe to be 100% wrong.

Also check out the dedicated SDM (stereo-data-maker) version of CHDK that
was designed specifically for shooting stereo-pairs, with sync speeds up to
1/20,000th of a second between cameras.

A high-resolution high-speed-sync stereo photography setup of matched
camera-pairs can be had for around $200, camera choice dependent.

Be glad that someone other than the newsgroup resident-trolls happened to
